Spanish Food Feature of the Month – May
Olives
The Spanish word for olive “aceituna” and olive oil “aceite” originate from the Arabic word al-zait meaning “olive juice”. Olives grow south of a line from Gerona in the east of Spain to the border with Portugal in the west - the further south you go the more olive trees you will find. There are over 260 varieties of olive grown in Spain, of which only 24 are used for olive oil production. If the olive fruit is to be eaten it is best cured in brine for between one and six months.

The first week in May sees the Fiestas de la Santísima y Vera Cruz in Caravacca. A week of festivities, the most famous being the wine horse fiesta with horses in bejewelled costumes racing through the little streets.
